2 large COLOMBA potatoes
50 g of roasted salted peanuts
1 clove of garlic
100 g rocket
25 g of basil
6 cl of olive oil
a pinch of coarse salt, 1 small piece of dry pepper

Pesto with peanuts and potatoes
Step 1: Wash the potatoes.
Step 2: Put with adhering water in a bowl. Cook for about 5 minutes in microwave oven at full power.
Step 3: Put the peanuts, peeled garlic, arugula and basil, salt and pepper in a blender. Mix for some moments and then add the oil and blend again
Step 4: Stop when the granularity is satisfactory. Coarsely grate the peeled potatoes while still hot and toss gently
Step 5: Taste on toast or stuff vegetables with the mixture
