1 potato COLOMBA
200 g beef (sirloin, rump, sirloin, ...)
1 leek, 6 cm of ginger
1 clove of garlic, 2 tablespoons soy sauce
2 teaspoons honey, 4 tablespoons of beer
1 cc of soybean oil, 1 small red pepper
1 small green pepper, 8 cabbage leaves
a long radish, 2 turnips
2 tablespoons neutral oil, 2 tablespoons sesame seeds
few sprigs of herbs (cilantro, mint)

Cut beef into strips. Mince the green part of the leeks and the peeled ginger. Peel and crunch the garlic. Mix with soy sauce, honey, beer and sesame oil. Marinate for 3 hours if possible. Cut the potatoes very thinly (if available with a mandolin, if not with a knife). Wash thoroughly in cold water and dry on paper towels. Remove the pips from the peppers and thinly slice all the vegetables remaining. Heat 1 tablespoon oil in a wok, brown the drained meat with sesame and remove. Pour one  tablespoon of oil and fry the potatoes. Once they are colored, add the peppers. Fry for 2-3 minutes, then add the remaining vegetables. Saute 2 minutes pendant then add the reserved marinade and meat. Continue cooking for 2 minutes. Add salt and pepper. Add chopped herbs and serve immediately.

Expert’s Tip: use seasonal vegetables who fit with the potatoes.
