1 potato Colomba
½ sweet onion or 1 shallot
½ apple acid
2 fish fillets
2 tablespoons white wine
20 g of butter
salt and pepper
Cut the potatoes into matchsticks. Wash and dry. Bake in microwave for 4-5 minutes. Check they are cooked. Peel the onion and mince. Cut the apple into julienne (small fries of 2 square mm). Add salt and pepper on the fish fillets on 2 sides. Spread 1/3 of onion and chopped apple at the bottom of a foil or a silicone sheet of baking paper. Place the fish and to distribute the remainder of apple and onion and matches potato. Add salt and pepper, sprinkle with wine and spread some pieces of butter. Close the foil and cook in steam for 8-15 minutes depending on thickness of fillets. Served hot or warm.
Presentation Expert’s Tip: slice the potatoes and apples in very thin slices. Pre cook quickly the potato slices in a microwave oven. Place the potato and apple slices above and below the fish fillets in a way to create scales for your fish fillets.
