3 medium COLOMBA potatoes 3 tablespoons olive oil 1 onion 2 peppers 8 eggs salt and pepper

Tortilla with pepers
Step 1: Wash the potatoes and cut into cubes of 1,5 to 2 cm square
Step 2: Heat oil in a nonstick skillet to medium. Brown the potatoes for 3 minutes. Cover and cook over low heat, stirring occasionally for 10 minutes.
Step 3: Meanwhile, peel and mince the onion, peppers open, drain and cut into cubes.
Step 4: Add the union, peper, salt and pepper during cooking.
Step 5: Beat eggs, salt and pepper and pour over vegetables. Cook covered over very low heat for 10 to 15 minutes. Return halfway sliding the tortilla onto a large plate or finish cooking the top of the omelet under the broiler.
Step 6: Serve hot, warm or cold with a green salad.
