110 g COLOMBA potato
1 can of tuna fish or sardines in sauce (160 g)
50 g butter
½ lemon
herbs (basil, cilantro, parsley, ...) at your preference
salt, pepper or black pepper

 

 

Peel the potatoes and cut them into large cubes. Rinse with cold water, drain quickly and place in a baking pan with 1 tablespoon of water. Add salt and cook covered in a microwave oven at full power for 5 till 8 minutes depending on your oven.
Meanwhile, open the fish can. Chop the herbs. Check with a knife if the potatoes are cooked. Crush them quickly with fish, chopped herbs and lemon juice then add the softened butter (soft). Mix, season and cool for 30 minutes before serving with toasted bread.

Gourmet’s Tip: prepare this appetizer in advance and take it out of your fridge 30 minutes before serving.
